Quick smoked salmon pâté

    Smoked salmon trimmings blended with fresh herbs and white beans make a delicious pâté that needs no cooking.

    Serves: 4 

    • 200g (7 oz) canned cannellini beans, drained
    • 2 tablespoons chopped fresh herbs, such as chervil, dill and parsley
    • Juice of ½ lemon
    • 200g (7 oz) smoked salmon trimmings
    • Salt and black pepper
    • To serve: brown toast, crackers or crudités

    1. Blend the beans, herbs, lemon juice and salmon in a food processor or with a hand-held mixer until it is really smooth. Add salt and black pepper to taste, then transfer the pâté to a serving dish and chill for 30 minutes-1 hour. Serve it with brown toast, crackers or crudités. The pâté is best eaten very fresh.

    An easily prepared starter .Everyone enjoyed it.I had to add more lemon juice than indicated in the recipe a drop of balsamic vinegar adds interest  -  27 Dec 2012


    It seems a little dry to me, but I will serve it later for dinner and see what our guests say, I am going to add more lemon juice when I serve it.  -  22 Nov 2012


    SORRY I teak everything. Find white beans drying to the palate, so used chickpeas, a spoon of whole grain mustard ,a thinly scattering of chopped spring onion. And a amount of mayo depending on the consistancey you need. Salmon thanks to Dunkeld Smokery.  -  09 Aug 2015
