Combine the flour, oats, eggs and oil in a bowl. Whisk together with a hand whisk until all ingredients are combined. Add about half the milk, whisk together and check the consistency. Keep adding more milk until the mixture pours with ease. If you want you could add some chopped pecans to the mixture at this point, they go really well with the banana.
In a frying pan over a medium heat, spray lightly with cooking oil. Pour in 1/4 of the mixture. Cover the pancake with 1/4 of the banana slices. One the mixture starts to bubble on top, flip it over and cook for another couple of minutes (frying the banana really brings out the flavour). Repeat until all the mixture is used up. Serve warm and enjoy.
