Healthy banana oat pancakes

    These pancakes are really tasty, contain absolutely no sugar and can be enjoyed on their own so there is no need for topping - but if you want a treat they are lovely with some homemade toffee sauce!

    Makes: 4 pancakes

    • 2 tablespoons wholemeal flour
    • 2 tablespoons porridge oats
    • 2 eggs
    • 1 splash sunflower oil
    • about 300ml skimmed milk
    • chopped pecans, to taste (optional)
    • spray cooking oil, for frying
    • 2 medium bananas, sliced

    1. Combine the flour, oats, eggs and oil in a bowl. Whisk together with a hand whisk until all ingredients are combined. Add about half the milk, whisk together and check the consistency. Keep adding more milk until the mixture pours with ease. If you want you could add some chopped pecans to the mixture at this point, they go really well with the banana.
    2. In a frying pan over a medium heat, spray lightly with cooking oil. Pour in 1/4 of the mixture. Cover the pancake with 1/4 of the banana slices. One the mixture starts to bubble on top, flip it over and cook for another couple of minutes (frying the banana really brings out the flavour). Repeat until all the mixture is used up. Serve warm and enjoy.
