About this recipe: Finely sliced healthy smoked salmon makes an ideal partner to serve with virtually fat-free quark.

Serves: 1 

  • 50 g (1¾ oz) quark
  • 1 teaspoon lemon juice
  • 1 bagel
  • 50 g (1¾ oz) smoked salmon, finely sliced
  • Black pepper
  • To garnish: a few sprigs of dill, chopped

  1. Mix together the quark and lemon juice.
  2. Warm the bagel briefly, slice it in half and spread the bottom piece with the quark mixture. Sprinkle it with the slices of salmon then add black pepper to taste and a little dill. Cover with the top half and eat while the bagel is still warm.

Low-fat tip

Quark, a very light soft cheese, makes a fresh alternative to the rich cream cheese usually served in bagels.
