Finely sliced healthy smoked salmon makes an ideal partner to serve with virtually fat-free quark.

50 g (1¾ oz) quark
1 teaspoon lemon juice
50 g (1¾ oz) smoked salmon, finely sliced
To garnish: a few sprigs of dill, chopped

Mix together the quark and lemon juice.
Warm the bagel briefly, slice it in half and spread the bottom piece with the quark mixture. Sprinkle it with the slices of salmon then add black pepper to taste and a little dill. Cover with the top half and eat while the bagel is still warm.
