One pot roast chicken

    I have recently started cooking a whole chicken in a pot with loads of garlic, lemon and herbs. It's so easy and turns out juicy and delicious every time. More importantly, the whole family eats it! If you have chicken and garlic cloves left over, they are great to use in a quick Thai curry or chicken noddle soup the next night.

    Serves: 6 

    • 1 (1.75kg) whole chicken
    • 1/2 lemon
    • 6 - 10 cloves of garlic, peeled
    • a few sprigs of rosemary, thyme or sage
    • 1 tablespoon olive oil
    • sea salt and freshly ground black pepper to taste

    1. Preheat oven to 190 C / Gas 5.
    2. Place the lemon, garlic cloves and herbs in the chicken cavity; place the whole chicken in a ceramic pot (that has a lid). Rub olive oil into the skin and season generously with salt and pepper. Cover with lid and roast in the oven for about 1 to 1 and 1/2 hours, or until juices run clear.
