You can find vanilla sugar in larger supermarkets or you can make your own by placing a vanilla bean in a airtight container filled with caster sugar; let it sit for a week and you'll have your very own vanilla sugar to use in these shortbread biscuits!
Makes: 36 biscuits
75g caster sugar
2 1/2 teaspoons vanilla sugar
1 teaspoon baking powder
150g plain flour
1 egg yolk

Preheat the oven to 150 C / Gas 2.
Combine the butter, sugar and vanilla sugar in a bowl and mix well. Add the flour, baking powder and egg yolk and knead till a smooth dough forms.
Roll out the dough on a lightly floured surface. Cut out shapes using the cutter of your choice. Place biscuits on a parchment-lined tray.
Bake for 10 minutes, or till lightly golden. Remove and cool on the tray.
For extra vanilla flavour, replace all or some of the caster sugar with vanilla sugar. If you don't have vanilla sugar, you could also use about 1/2 teaspoon vanilla extract.
