    About this recipe: A filling, tasty bake made from store cupboard items in less than 30 minutes. Super easy one bowl meal! Adjust ingredients for the amount of people you're feeding.

    Ingredients
    Serves: 4 

    • 250g penne pasta
    • 2 (185g) tins tuna in brine, drained
    • 3 to 4 tablespoons sweetcorn
    • 1/2 onion, grated
    • 2 cloves garlic, chopped
    • 1 dash chilli powder or flakes
    • 1 to 2 tablespoons mayonnaise
    • 1 (180g) tub cream cheese
    • 8 hard boiled eggs, roughly chopped
    • 1 handful grated cheese, of your choice

    Method

    1. Preheat the oven to 180 C / Gas 4.
    2. Bring a saucepan of lightly salted water to the boil over a high heat. Add the pasta and cook until al dente. Drain.
    3. Meanwhile, in an ovenproof baking dish mix the tuna, sweetcorn, onion, garlic, chilli, mayo and cream cheese. Mix but keep fairly chunky.
    4. Add drained pasta and eggs. Mix, taste and add any further seasoning if desired. Sprinkle some grated cheese on top.
    5. Bake in the preheated oven for 20 minutes or until piping hot and the cheese has melted.

    Tip

    Any leftover vegetables can be added to this recipe but I just used what was in the fridge. Serve with doorstep bread 'n butter and/or a salad.
