Quick and easy chocolate mousse

    This quick and easy chocolate mousse is ready in about an hour and is ideal for when you need something delicious pronto. Easy to make ahead for dinner parties, Valentine's Day or other special occasions.

    Serves: 4 

    • 90g dark chocolate (at least 85% cocoa solids)
    • 2 tablespoons cherry syrup
    • 450ml double cream
    • flaked chocolate, to decorate

    1. Break the chocolate into pieces and melt in a double boiler over barely simmering water. Stir in the cherry syrup.
    2. In a large mixing bowl. whisk the cream until soft peaks form. Very gradually, add in the melted chocolate and whisk until light and airy.
    3. Spoon or pipe the mousse into 4 dessert glasses. Sprinkle with flaked chocolate. Serve slightly chilled.
