    About this recipe: Yummy pancakes that are naturally wheat and gluten free. Easy to find almond flour (ground almonds) is used for this simple recipe, a refreshing and tasty change from all those gluten free recipes with hard to find ingredients.

    Makes: 4 to 6 pancakes

    • 125g almond flour (or ground almonds)
    • 60ml water
    • 2 eggs
    • 1 tablespoon maple syrup or honey
    • 1/4 teaspoon salt
    • 1 teaspoon oil

    1. Whisk together all ingredients in a bowl until batter is smooth.
    2. Heat oil in a frying pan over medium heat; drop batter by large spoonfuls into the pan, and cook until bubbles form and the edges are dry, 3 to 5 minutes. Flip, and cook until browned on the other side, 3 to 5 minutes. Repeat with remaining batter.
