Super quick super healthy chicken curry

    This healthy curry can be enjoyed with boiled rice or oven baked chips. It's easy to use and you can adjust the spice to your liking. Remember if you like garlic or chilli then don't be afraid to add more. For a more Indian curry replace the chicken soup with tomato soup.

    Serves: 2 

    • oil, as needed for cooking
    • 1 large onion, diced
    • 2 chicken breasts, diced
    • 1 (295g) tin chicken soup (e.e. Weight Watchers®)
    • 3 tablespoons curry powder
    • 1 teaspoon chilli powder

    1. Warm a little oil in a wok over a medium heat. Add the onion and cook and stir until soft, about 4 to 6 minutes.
    2. Add the chicken and cook and stir until browned on all sides. Add the soup, curry powder and chilli powder and simmer gently for about 30 minutes, or until the chicken is no longer pink in the centre. Remove from the heat and serve hot.
