Warming potato and leek soup

    I love the smell and warmth of leek and potato soup. This is easily made. Enjoy with some crusty bread.

    Serves: 4 

    • 600ml vegetable stock
    • 1 large leek, finely sliced
    • 3 potatoes, peeled and diced
    • 1 teaspoon dried parsley
    • 1 sprinkle garlic powder

    1. Warm the stock in a saucepan over a medium heat. Add the leeks, potato, parsley and garlic and simmer for 30 minutes or until the potatoes are tender.
    2. Depending on how you like the consistency of your soup, either serve chunky into warmed bowls or blend using a handheld liquidiser. Serve hot.
