Mint garlic parsley scallops

    So I bought these fancy scallops in a presentation shell for New Years party and decided to have a go myself. I bought frozen scallops out of Asda and defrosted them. I was told these were nicer than the bought ones and I even kept the shells for presentation.

    Ingredients
    Serves: 4 

    • 2 cloves garlic
    • 1 handful fresh parsley
    • 2 to 3 fresh mint leaves
    • 3 tablespoons butter
    • 12 king scallops

    Method
    Prep:15min  ›  Cook:10min  ›  Ready in:25min 

    1. Preheat the oven to 180 C / Gas 4.
    2. In a food processor combine the garlic, parsley, mint and butter and blend until a smooth paste forms.
    3. Arrange the scallops in a baking dish, or if you have them some ovenproof presentation shells, then top with a little of the butter mixture.
    4. Bake in the preheated oven for 10 minutes, or until the scallops are an even white colour throughout. Remove from the oven and serve.
