Gnocchi with chilli tomato sauce

    Easy midweek meal that can be adapted for your own taste! Lovely served with a salad and some garlic bread on the side.

    Ingredients
    Serves: 4 

    • 1 (500g) pack gnocchi
    • oil, as needed for cooking
    • 1 onion, diced
    • 1 red pepper, seeded and roughly chopped
    • 2 (400g) tins chopped tomatoes
    • 1 teaspoon chilli flakes
    • salt, to taste
    • 1 (500g) ball mozzarella, sliced

    Method

    1. Preheat the oven to 180 C / Gas 4.
    2. Place the gnocchi into the base of an ovenproof dish directly from the pack.
    3. In a frying pan over a medium heat, warm a little oil and add the onions and peppers and cook and stir until soft, roughly 5 minutes. Add the tomatoes, chilli flakes and salt and leave to simmer for 5 minutes. Pour the sauce over the gnocchi and mix together. Lay the slices of mozzarella on top.
    4. Bake in the preheated oven for around 20 minutes or until the cheese is bubbling and is golden in colour. Remove from the oven and serve.
