Cauliflower and Stilton soup

    Warming on a cold day. This slow cooker cauliflower and Stilton cheese soup is delicious served with some warm crusty bread.

    Serves: 4 

    • 1 head cauliflower, cut into florets
    • 5 to 6 potatoes, peeled and diced
    • 200g Stilton cheese, crumbled
    • 200ml chicken stock
    • 200ml vegetable stock
    • 130g Carnation® evaporated milk

    1. Preheat the slow cooker to High.
    2. Combine all of the ingredients into the slow cooker, except the milk, and cook on High for 30 minutes. Reduce to low and cook for 2 to 3 hours until the vegetables are tender. Once tender, add the milk and blend to a smooth consistency using a hand held liquidiser or food processor. Serve in warmed bowls.

    Always wanted to try this, was a wee bit thick when blended. I used double cream instead of evaporated milk as that was what I had. Tasted lovely very filling.  -  06 Oct 2017


    Wow what a cracking and wonderfully filling soup. I did add some onion and garlic to it and it made 8 very big servings. This will definitely be a go too soup for the winter.  -  03 Feb 2016
