    About this recipe: This delightful soup is flavoured with warm spices and blended to a velvety smooth texture with loads of flavour. Super easy, quick and a great way to get part of your five a day. "Souper soup"

    Ingredients
    Serves: 3 

    • 1 tablespoon olive oil
    • 1 onion, roughly chopped
    • 2 sticks celery, roughly chopped
    • 2 carrots, peeled and roughly chopped
    • 1 clove garlic, crushed
    • 1 teaspoon ground cumin
    • 1/2 teaspoon ground turmeric
    • 1/2 teaspoon ground coriander
    • 175g red lentils
    • 3 to 4 red peppers, seeded and roughly chopped
    • 1.5L vegetable stock
    • 1 (400g) tin chopped plum tomatoes
    • 2 tablespoons tomato puree
    • 1 whole fresh chilli, chopped (seeds optional)

    Method

    1. Heat the oil in a saucepan over a medium heat. Add the onion and cook over a low heat for 7 to 8 minutes, stirring occasionally, until beginning to soften. Stir in the celery and carrot and cook for 3 minutes, stirring frequently. Add the garlic, cumin, turmeric and coriander and cook for a further minute, stirring constantly.
    2. Add the lentils, peppers, stock, tomatoes with their juice, tomato puree (and fresh chilli if you feel brave). Bring to the boil then reduce the heat, half-cover the pan with a lid and simmer for 25 to 30 minutes until the lentils and vegetables are very soft.
    3. Blend the soup until smooth and check the consistency, it will be fairly thick, so if you prefer it thinner, dilute with a little more stock. Season to taste, then reheat and enjoy with whatever bread you like. Spoon into warmed bowls and serve.

    Variations

    I have added other vegetables to this soup, and it's up to you. I have tried parsnips, sweet potatoes and butternut squash. I've even substituted the celery for leeks. Once you've tried it, try and mix the vegetables. You'll have clean bowls every time. I also prefer chilli infused oil to olive oil for this recipe.
