Creamy mustard and tarragon chicken

About this recipe: This is a very easy dish to make. I serve it with roasted new potatoes and vegetables but would be nice with rice too. It also works well with pork loin instead of chicken.

Serves: 2 

  • 1 tablespoon olive oil
  • 2 skinless chicken breast fillets, diced
  • 3 to 4 tablespoons half fat creme fraiche
  • 1 teaspoon wholegrain mustard
  • 3/4 teaspoon dried tarragon
  • salt and freshly ground black pepper, to taste

  1. Heat the oil in a saucepan over a medium heat then add the chicken and cook and stir for about 5 minutes. Add the creme fraiche, mustard, tarragon and season to taste.
  2. Cook over a low heat for approximately 10 minutes, stirring frequently, until the chicken is no longer pink in the centre and the sauce has thickened. Remove from the heat then serve immediately.


If you like a little more sauce simply add another tablespoon of creme fraiche and slightly more mustard and tarragon.
