These rich chocolate mousses are great for that perfect night in. To decorate, lightly whip double cream and spoon a thin layer over the top of the mousse. Perhaps grate over some chocolate and finish with a wafer.
Melt the chocolate in a double boiler or in a bowl over a pan of barely simmering water. Once melted, remove from the heat and immediately stir in the egg yolks.
Pour the cream into a mixing bowl and whisk until soft peaks form then stir this into the chocolate mix.
In a separate bowl, beat the egg whites until stiff and fold into the chocolate mix, trying to maintain as much air as possible. Pour into six glass tumblers and leave to set in the fridge for 2 hours.
