Jade's leek and potato soup

    Perfect for a warming lunch on a cold day or a starter. Serve with a nice warm crusty bread roll on the side.

    Serves: 2 

    • 2 large leeks, cut into small chunks
    • 4 medium potatoes, peeled and cut into small chunks
    • 850ml vegetable stock
    • black pepper, to taste

    1. Place the vegetables in a saucepan over a high heat and pour in the stock and season. Bring to the boil then reduce the heat and simmer for 30 minutes.
    2. If desired, blend the soup in a food processor or using a handheld liquidiser or leave as is if you prefer it chunky. Ladle into warmed bowls and serve.


    Try different types of vegetables-carrots, swede, cabbage or peppers could all be added You could also try adding cooked chicken or a little grated cheese for the last five minutes of cooking.
