Mia's chocolate brownies

    This recipe is light fluffy and butter free! Less fattening as it is made with oil. Easy to make and keeps well in an airtight container for several days.

    Serves: 6 

    • 115g plain flour
    • 1 pinch bicarbonate of soda
    • 1 tablespoon cocoa powder
    • 300g milk chocolate
    • 70ml vegetable oil
    • 3 eggs
    • 200g caster sugar

    1. Preheat the oven to 180 C / Gas 4. Grease a square baking tin.
    2. Sift together the flour, bicarb and cocoa powder.
    3. Melt the chocolate with the oil in a saucepan over a low heat.
    4. Whisk together the eggs and sugar until pale and creamy. Add the egg mixture to the flour mixture, then stir in the melted chocolate. Pour mixture into ready prepared tin.
    5. Bake in the oven for 30 minutes or until skewer inserted comes out clean. Remove from the oven and mark into squares. Allow to cool in the tin before slicing and serving.


    Make sure you mix thoroughly and get all the flour from the bottom.
