Easy banana muffins

    A tasty and simple way to use up over-ripe bananas, they disappear very quickly whenever I make them!

    Makes: 12 muffins

    • 200g plain flour
    • 1/2 teaspoon baking powder
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon ground cinnamon
    • 1 pinch salt
    • 3 large bananas
    • 75g butter, melted
    • 1 egg
    • 120g caster sugar
    • 30g light muscovado sugar
    • 10g chocolate, melted (optional for decoration)

    1. Preheat the oven to 180 C / Gas 4 and line a 12 hole muffin tin with paper cases.
    2. Sift together the flour, baking powder, bicarb, cinnamon, and salt into a bowl and set to one side.
    3. Mash up the bananas and the melted butter, egg, and sugars. Combine these together.
    4. Fold in the flour mix from earlier and beat until you form a smooth mixture (don't worry if there are a few banana lumps). Divide the cake mixture equally between the prepared paper cases, taking care to fill only to half way to allow for a good rise.
    5. Bake in the preheated oven for 20 to 25 minutes until a skewer inserted into the centre comes out clean or until the tops spring back when tapped. Remove from the oven and place the muffins immediately on a cooling to cool. Once cooled, drizzle the melted chocolate on top to decorate if desired.

    I didn't have muscovado sugar, but otherwise I kept to the original recipe. I decorated them with little chocolate beans. Absolutely delicious and easy to make!  -  25 Sep 2015
