Spicy egg noodle and garlic mushroom stir fry

    Easy, quick and simple stir fry recipe, great for lunch time or as a snack. One of my husband's new favourites.

    Serves: 2 

    • 1 tablespoon vegetable oil
    • 1 large onion, sliced
    • 200g sliced mushrooms
    • 4 garlic cloves, crushed
    • 1 green pepper, sliced
    • 1 red pepper, sliced
    • 1 sprinkle salt
    • 1/2 teaspoon ground black pepper
    • 1/2 teaspoon cayenne
    • 1/4 chilli flakes
    • 200g pre-heated cooked egg noodles

    1. Heat the oil in a large frying pan over a medium heat. Add sliced onion and stir for 2 minutes or until soft. Add the sliced mushrooms, increasing the heat slightly and stir-fry for 5 to 10 minutes.
    2. Mix in the crushed garlic stirring for a further minute to blend the flavour into the mushrooms. Add more garlic if desired. Throw in the sliced green and red pepper and season with salt, pepper, cayenne and chilli flakes. Stir-fry for a further 5 to 10 minutes.
    3. Add the heated cooked egg noodles to the frying pan. Mix well and serve.
