Low fat cottage pie

    This cottage pie is low fat, gluten and dairy free. Depending on how much potato you use, this will serve between 2 and 4.

    Serves: 4 

    • 1 packet soffritto vegetables mix
    • 250g lean beef mince (5% or less fat)
    • 1 beef stock pot
    • 6 to 8 medium potatoes, peeled and quartered
    • dairy free spread, to taste

    1. Preheat the oven to 200 C / Gas 6.
    2. Put the soffritto mix into large sauté pan and let sweat for a few minutes over a medium heat. Add the beef and cook and stir until well browned, about 6 to 8 minutes. Add the stock pot and stir until well mixed.
    3. Transfer all ingredients to a food processor and blitz for a few seconds. Transfer back to sauté pan and simmer for 15 to 20 minutes.
    4. Meanwhile, bring a saucepan of water to the boil over a high heat then add the potatoes and cook until tender, about 12 to 15 minutes. Remove from the heat, drain and mash using dairy free spread to taste. Spread meat mixture into the bottom of an ovenproof baking dish and top with mash.
    5. Bake in the preheated oven for 15 to 20 minutes until piping hot and the mash is golden brown. Remove from the oven, serve and enjoy!

    Soffritto mix

    You can buy the soffritto mix from the supermarket. Or you can finely dice 2 carrots, 1 stick celery and 1 small onion.
