Chocolate Scotch bonnet hot sauce

    This is a great hot sauce without the vinegar taste you sometimes get with shop bought hot sauces, you can play around with the amount of cacao you add to make it more chocolatey! This recipe uses all natural and unrefined products so is great for clean living diets. I would say this was as hot as most Caribbean hot sauces.

    Serves: 15 

    • 110ml cider vinegar
    • 20 Scotch bonnet chillies (approx.165g), finely chopped
    • 1/2 tablespoon raw cacao powder
    • 1 teaspoon garlic powder
    • 1 1/2 tablespoons pure maple syrup
    • 1/2 teaspoon salt
    • 1 pinch dried oregano

    1. In a saucepan add the cider vinegar and then add the Scotch bonnets and simmer for 10 minutes on a low to medium heat. Add the remaining ingredients and stir well, simmer for a further 5 minutes.
    2. Remove from the heat and allow to cool. Transfer the mixture to a blender or food processor and blend repeatedly until smooth. Use or store in the fridge for up to 3 weeks.
