    Boxty based pizza. Plain flour, salt, pepper, eggs, water and finely grated potatoes, washed but not peeled. For the Boxty, you mix it into a batter consistency, then fry in a hot pan just like you would a pancake. Once made put on a plate, top with tomato puree or sauce, then cheese and baked beans, or any topping that takes your fancy, place in the oven or microwave until cheese is melted, take out and eat.

    Makes: 4 boxty pizzas

    • 1kg floury potatoes
    • 150g plain flour
    • 300ml buttermilk or natural Greek yoghurt
    • 1 teaspoon salt
    • 1 teaspoon pepper
    • 1/4 teaspoon bicarbonate of soda
    • 2 eggs
    • 340ml milk
    • butter, to taste
    • 1 teaspoon tomato puree
    • 100g to 150g grated cheese, of your choice
    • 2 (400g) tins baked beans
    • pizza toppings of your choice

    1. Preheat the oven to 180 C / Gas 4.
    2. Grate the potatoes into a fine mush, then place into a large mixing bowl. Add the flour, buttermilk, salt, pepper and bicarb.
    3. Mix the eggs with the milk then pour into the bowl with the potatoes and mix to a batter consistency. Add more milk mixture if required.
    4. Melt a knob of butter in a frying pan over a medium heat then ladle in the boxty mixture to form a cake, you will make four cakes, so divide the mixture accordingly. Cook until golden brown underneath then flip over and continue to cook until golden brown, about 8 to 10 minutes. Repeat three more times with the remaining mixture.
    5. Place the boxty onto a baking tray then spread a little butter and tomato puree on top and cover with grated cheese, baked beans and any other toppings you would like. Repeat with the three other cakes.
    6. Place in the preheated oven (or microwave) and cook until the cheese has melted. As I said put on the top whatever you like, the kids would love getting involved with this. Eat and enjoy.


    You may find these very filling, but there's nothing better that warmed up boxty the day after.


    Floury potatoes will work best for this recipe, look for Desiree, King Edward and Maris Piper in the shops.
