Vegan pancakes with fresh fruit

About this recipe: A simple vegan recipe that's delicious and filling. This recipe is topped with fresh spiced fruit and fresh lemon juice for a truly invigorating flavour.

Serves: 2 

  • 125g plain flour
  • 1 teaspoon baking powder
  • 50g cane sugar
  • 2 tablespoons melted vegan margarine or sunflower oil
  • 120ml almond milk
  • chopped fresh fruit, of your choice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • freshly squeezed lemon juice, to taste

  1. Mix the flour, baking powder, sugar, melted margarine and almond milk in a large bowl to form a thick, gooey batter.
  2. Drop 1 cooking spoon of the batter into the centre a non-stick frying pan and cook on both sides over a medium-low heat until golden brown. Repeat the process for the rest of the pancakes.
  3. Place the chopped fruit in a bowl and toss with cinnamon and nutmeg until evenly coated.
  4. Stack your warm pancakes on a plate and top with the spiced fruit. Squeeze as much lemon juice as you want over the top and serve immediately.
