This dipping or pouring sauce is the perfect accompaniment to Chinese-style crispy battered chicken. This is how you make lemon sauce that everyone will enjoy with any meal (especially with Chinese food).
Using a vegetable peeler, peel off the rind of the lemons, avoiding the white pith. Slice very finely.
Cut the lemons in half, juice into a medium pan and add the lemon rind, water and sugar. Bring to the boil, then reduce to a simmer and cook till the rind has softened, 10 to 15 minutes.
Combine flour with a teaspoon or two of water to make a slurry. Add the sweet chilli sauce to the lemon sauce and whisk in while drizzling in the flour slurry, making sure there are no flour lumps. Simmer for about 5 minutes or until thickened.
