Super spicy chickpea curry

    A hot and spicy dish, very tasty and yummy! Of course if liked, you can omit some of the hot stuff and make it into a milder dish!

    Serves: 2 

    • 2 teaspoons sunflower oil
    • 1 medium onion, chopped
    • 1/2 tin chopped tomatoes
    • 1 large garlic clove, grated
    • 2 fresh green chilllies, sliced lenghthways
    • 3/4 teaspoon ground ginger
    • 1/2 teaspoon ground cumin
    • 1/2 teaspoon ground coriander
    • 1/2 teaspoon garam masala
    • 1/4 teaspoon turmeric
    • 1/2 teaspoon extra hot chilli powder
    • 300g tinned or pre-cooked chickpeas
    • salt to taste
    • 1 tablespoon chopped fresh coriander

    1. Heat oil in a pan. Saute the onion till translucent, then add the tomatoes and cook till they are mushy, about 5 minutes.
    2. Add the garlic, green chillies and all spices. Cook for 2 minutes, then add the chickpeas and stir well, cooking for a further 2 minutes.
    3. Add about 250ml of water. Bring to the boil, then reduce heat and simmer till sauce is thickened and reduced, about 8 minutes. Salt to taste and garnish with coriander before serving.
