    Makes: 1 (20cm) cake

    • 225g (8 oz) plain flour
    • 225g (8 oz) caster sugar
    • 225g (8 oz) unsalted butter, softened
    • 1 teaspoon baking powder
    • 1/2 teaspoon bicarbonate of soda
    • 1/4 teaspoon salt
    • 3 eggs, room temperature
    • Optional additions
    • 1 1/2 teaspoons extract of choice, such as vanilla or almond
    • 2 to 3 tablespoons zest of your choice, such as lemon, lime or orange
    • food colouring gel

    1. Preheat the oven to 180 C / Gas 4. Grease and line two 20cm (8 in) round cake tins.
    2. Put flour, sugar, butter, baking powder, bicarb, salt and eggs into a bowl. Start mixing with an electric mixer; beat for 4 minutes on medium speed, scraping down the sides if needed.
    3. Now mix in any additions, if using. You can get creative and even split the cake mixture in half, then add one flavouring or colouring to one half and a different one to the other!
    4. Split the cake mixture equally between each prepared tin and level with a spatula.
    5. Bake for 20 to 30 minutes or until lightly brown and a toothpick inserted into the centre comes out clean. Leave to cool for 10 minutes and then turn out onto a wire rack to completely cool.


    Don't over mix the cake mixture! Make sure all your ingredients are room temperature before starting. You can also use salted butter, but then be sure to omit the extra salt.
