Cheesy bacon potato pie

    Simple, delicious comfort food! This cheesy, bacon potato pie is delicious as a simple main meal or as a side dish to accompany a variety of meat dishes.

    Serves: 4 

    • 3 to 4 potatoes, peeled and chopped
    • 3 to 4 rashers bacon, diced
    • 1 onion, chopped
    • 1 to 2 tablespoons butter
    • 2 to 3 tablespoons milk
    • salt, to taste
    • 100g to 200g grated cheese of your choice

    1. Bring a saucepan of water to the boil over a high heat then add the potatoes and cook for 20 to 30 minutes until tender.
    2. Preheat the oven to 190 C / Gas 5.
    3. Meanwhile, fry the bacon in a frying pan over a medium heat until slightly crispy and cut into small bitesize squares.
    4. Bring a second saucepan of lightly sugared water to the boil then add the onion and cook until soft. Drain.
    5. When the potatoes are tender, drain them and mash them, adding butter, milk, salt and cheese to your taste (hint - the more cheese the better!)
    6. Stir in the cooked bacon and onions into the cheesy mash until it is all mixed in, spread into a pyrex dish and cover with a layer of grated cheese.
    7. Bake in the preheated oven until the cheese is bubbling and golden, about 15 minutes. Remove from the oven and enjoy!


    You can add pretty much anything you fancy into this dish!
