Perfect fluffy roast potatoes

    The perfect accompaniment to roast dinners and meat dishes! The trick to achieving delicious roast potatoes is to boil them prior to roasting.

    Serves: 8 

    • 3 to 4 large potatoes, peeled and quartered
    • vegetable oil, as needed for cooking
    • salt, to taste
    • mixed dried herbs, to taste

    1. Bring a saucepan of water to the boil and add the potatoes. Boil for around 20 to 30 minutes until tender. Drain.
    2. Preheat the oven to 200 C / Gas 6.
    3. Meanwhile, pour a liberal amount of vegetable oil into a roasting tin (so that it is around .5cm deep) and place it in the oven to heat up.
    4. Remove the hot oil from the oven and add the potatoes, carefully tossing the potatoes in the oil to coat.
    5. Roast in the oven for 15 minutes. Remove from the oven and toss again in the oil. Add a sprinkle of salt and mixed herbs onto each potato, place back in the oven for 20 minutes.
    6. After around 45 minutes cooking, they should be perfectly crispy on the outside and fluffy on the inside. Remove from the oven, serve and enjoy!
