Paal paayasam (Keralan rice dessert)

    For something that tastes yum, it's really easy to make. This is a recipe for how to cook paal paayasam, a Keralan dessert. Paayasam is a sweet dish made with rice, milk and sugar or jaggery. It is usually served at feasts or on special days.

    • 1 to 2 teaspoons ghee
    • 50g short grain rice
    • 1.5L milk
    • 750g caster sugar
    • 30g cashew nuts
    • 30g raisins
    • 4 cardamom pods, crushed

    1. Place a little ghee in the bottom of the pressure cooker then add the rice, milk and caster sugar. Lock the cover in place and cook over a high heat until you hear the first whistle.
    2. Reduce the heat to low and cook for a further 30 minutes until the mixture is thick and creamy. Transfer into a serving bowl and top with cashew nuts, raisins and cardamom and serve. Alternatively you can chill before serving.
