About this recipe: My first recipe to make in a soup maker, so quick and easy. Deliciously creamy and satisfying. One of my best purchases was my soup maker, just add ingredients then wait for the ping! Hot delicious fresh homemade soup without any real effort.

Serves: 4 

  • 1 small red onion, chopped
  • 2 medium leeks, sliced
  • 4 medium white potatoes, chopped
  • 1 small knob butter
  • 1 vegetable stock pot or cube
  • 1 mixed herb stock pot ( or 1 teaspoon mixed herbs)
  • 150ml creme fraiche
  • salt and pepper, to taste

  1. Place the onions, leeks and potatoes in the soup maker. Add a knob of butter, stock pots (or mixed herbs) and creme fraiche. Pour in enough water to bring the contents of the soup maker up to the maximum fill line in the soup maker or 1.6L mark depending on your model. Season to taste.
  2. Start the soup maker on smooth setting if available. If smooth setting is not available, simply switch on then blend at the end to required consistency.
  3. Allow to cook for about 20 to 30 minutes. This is all it takes to produce a hot, rich satisfying meal! Ladle into warmed bowls and serve.

Made this today and it was fantastic! I don't like my soups too thin and this was perfect and very filling. I also added a couple of carrots for some sweetness! Perfect winter warmer! - 17 Jan 2016
