About this recipe: I love proper food. I mean big, warming plates of food, that make my insides happy. This sausage casserole fills me up for hours and is proper food, plus it doesn't cost the earth to make!

Serves: 4 

  • 1 tablespoon oil
  • 8 sausages
  • 1 onion, chopped
  • 2 carrots, sliced
  • 100g mushrooms, quartered
  • 1 teaspoon paprika
  • 1 teaspoon mixed dried herbs
  • 1 (400g) tin chopped tomatoes
  • 1 (400g) tin butter beans, undrained
  • 1 stock cube
  • 100ml water
  • 1 pinch salt
  • 1 pinch pepper

Prep:20min  ›  Cook:30min  ›  Ready in:50min 

  1. Heat the the oil in a big deep frying pan over a medium heat then brown the sausages. Add the onions and carrots and cook and stir for a few minutes before throwing in the mushrooms and mixing in the paprika and herbs.
  2. Add the remaining ingredients and simmer for 30 minutes until the sausages are no longer pink in the centre and the sauce has thickened. Spoon into warmed bowls or serve over mashed potato.
