Gnocchi and bacon

    This is a recipe based very loosely on pasta carbonara, made with what I had on hand. I was surprised at how quickly it came together and how tasty it was! I'm really only posting it so I will remember to make it again. :-)

    Serves: 2 

    • 130g bacon, cut into small pieces
    • 1 medium onion, sliced thinly
    • 500g fresh gnocchi
    • 2 heaped teaspoons marscarpone cheese
    • 60ml skimmed milk
    • 50g grated Parmesan cheese

    1. In a dry frying pan over a medium heat, fry the bacon until crispy, then add the sliced onion and reduce the heat. Add a splash of water to pan to help soften the onions and caramelise them. Continue cooking on a low heat until onions are soft and browned. If it starts to stick, add a little bit water. No oil is needed.
    2. Meanwhile, bring a saucepan of water to the boil and cook the gnocchi according to the instructions on the packet, until tender. Once done, use a slotted spoon to add the gnocchi to the bacon and onions.
    3. Add the mascarpone cheese to the pan and fold in, allowing it to melt. Use some of the water from cooking the gnocchi to loosen the mixture and help the cheese melt. Add milk and cook until sauce is creamy. Finally add the Parmesan cheese and incorporate. Serve immediately.


    I did not get pictures to post this time around but when I make it again, I'll remember to take a few. This could easily be adapted to include vegetables or even be served as a side dish. I served it as a main meal, so this was enough for two.

    The hubby was unsure of Gnocchi at first but after the first bite, he immediately asked for me to make it again. I'd say that was a result!  -  06 Mar 2015
