Penne with chorizo

    This recipe is easy and fast to cook and it's really yummy. Pasta is one of my first choices when I have to cook and I have it done in no time because pasta can be cooked fast in many different ways and if you cook it with chorizo you'll have a really tasty dinner!

    Serves: 2 

    • 250g penne pasta
    • 1 medium onion, quartered
    • 4 garlic cloves
    • 1 (100g to 150g) chorizo
    • 3 tablespoons oil
    • salt and pepper, to taste

    1. Bring a saucepan of water to the boil over a high heat then add the pasta and cook according to the instructions on the packet or until al dente. Remove from the heat and drain.
    2. Using a food processor, finely chop the onion and garlic.
    3. Cut chorizo first into slices and then each slice into four pieces.
    4. Heat 3 tablespoon of oil in a non-stick frying pan over medium heat. Add the onion and garlic and cook and stir for 2 or 3 minutes until the onion is translucent.
    5. Add the chorizo and cook, stirring, for 3 or 4 minutes, taking care not to burn the chorizo!
    6. Now add the well drained penne to the frying pan, season and fry for a few minutes to allow for the flavours to mix. Serve and ENJOY!


    I used to buy a good Chorizo in The-Cooperative. It's a spanish Chorizo and really tasty. If you like really spicy Chorizo you can buy it in Tesco, "Noel Spicy Chorizo".
