Lovely chocolate crinkle cookies

    These cookies are lovely and soft (unless they are overcooked) and are best served warm with some ice cream!

    Makes: 15 crinkle cookies

    • 50g butter
    • 125g caster sugar
    • 1 egg
    • 1/2 to 1 teaspoon vanilla extract
    • 115g plain flour
    • 1 teaspoon baking powder
    • 20g cocoa powder
    • 30g icing sugar

    1. Preheat the oven to 180 C / Gas 4. Grease a baking tray.
    2. Beat the butter and caster sugar together in a large mixing bowl, until light and creamy.
    3. Beat the egg and vanilla extract in a separate bowl and then add it gradually to the mixture.
    4. Fold in the flour, baking powder and cocoa. Add a little at a time, through a sieve.
    5. Pour blobs onto a baking tray, then sprinkle a light dusting of icing sugar on top.
    6. Bake in the preheated oven for 12 minutes until firm yet still a little soft in the middle. Remove from the oven and transfer to a cooling rack. Either serve warm or allow to cool before enjoying.


    They will come out with cracks at the top, don't worry, that is fine. That is how you want them, therefore they are called CRINKLE COOKIES!
