About this recipe: I really love cooking these biscuits and they taste really nice. Best served warm with a cup of tea (or coffee)!

Makes: 10 gingerbread biscuits

  • 175g plain flour
  • 1 teaspoon ground ginger
  • 1/2 teaspoon bicarbonate of soda
  • 50g butter or margarine
  • 85g soft light brown sugar
  • 1 egg
  • 2 tablespoons golden syrup

  1. Preheat the oven to 180 C / Gas 4. Lightly grease a baking tray.
  2. Into a bowl, sift together the flour, ground ginger and bicarb. Add in the butter or margarine and rub in with the fingers until the mixture resembles fine breadcrumbs then stir in the sugar.
  3. Separate the egg yolk and white. To the yolk, add the golden syrup and beat well. Add to the flour mixture and mix well to bring together as a dough.
  4. Place the dough on a lightly floured work surface and knead gently. Roll out the dough until it is about 5mm thick then cut out into shapes using cutters of your choice. Transfer to the prepared baking tray and brush with egg white.
  5. Bake in the preheated oven for 12 to 15 minutes until firm and golden brown. Remove from the oven and serve warm or place on a cooling rack to cool completely before serving.


If you want to decorate them, writing icing or glaze icing always works well.
