Preheat the oven to 200 C / fan 180 C / Gas 6. Grease a brownie tin or deep baking tray and line with baking parchment.
Combine the butter and plain chocolate in a double boiler or in a bowl over a pan of barely simmering water. Add the orange oil and Tia Maria® if using and stir frequently until everything has melted together. Remove from the heat and leave to cool.
Mix the flour, cocoa powder, baking powder, caster sugar, and eggs in a large bowl or food processor, until thick and fully mixed. Beat in the melted chocolate until well incorporated. Pour into the prepared brownie or baking tin. Sprinkle over the cherries, marshmallows and white chocolate (making sure to distribute the toppings evenly.)
Bake in the preheated oven for 20 minutes until a skewer inserted into the centre comes out just a little bit gooey. Remember they are supposed to be squidgy in the middle, but how squidgy is up to you. Remove from the oven and leave to cool on a cooling rack. Enjoy with a cuppa or be really naughty and place in a bowl with some double cream or whipped cream, lush.
Choose whatever toppings sound good to you. Some other ideas are a chopped up Galaxy® caramel, or mini chocolates such as Wispa® bitesize.
These were great, I doubled it and used mainly plain dark chocolate, but also a little milk, little grated orange zest and instead of Tia Maria I used grand marnier and marshmallows...everyone loved them thanks - 09 Jun 2015
