Pina colada sorbet

    A stunningly simple sorbet for after dinner cool down. I always keep a tin of pineapple in the fridge so this is an 'instant' dessert any time.

    Serves: 4 

    • 560g pineapple chunks in juice, frozen
    • 3 tablespoons dark rum
    • 6 tablespoons coconut cream, chilled

    1. Place the bowl of frozen pineapple in hot water for about 1 minute (or you can take it out of the freezer and let it sit at room temperature for 15 minutes). Pour any juice into a food processor then turn out the pineapple onto a chopping board and chop into 2.5cm (1 in) cubes.
    2. Place in the food processor with the juice, rum and coconut cream, and process until smooth, about 1 minute.
    3. Serve at once, or transfer to a container, and place back in the freezer until needed.
