To a large bowl add the salad leaves, cucumber, olives, tomatoes, spring onions, pepper and carrots. Add the feta and shredded gammon.
To make the salad dressing mince the garlic with the onion and pepper to release the juices. Add the wholegrain mustard and mix well. Add olive oil bit by bit and mix well until the mixture has a moussy consistency. Very important, don't add too much oil at one time otherwise the mixture can split. When you achieved the right consistency, add a glug of balsamic vinegar and mix well. Pour over the salad and enjoy. For a crunchy finish you can add some croutons lightly dressed in olive oil.
