Bring a saucepan of lightly salted water to the boil. Add the pasta and cook according to the instructions on the packet. Two minutes before the pasta reaches al dente, add the broccoli (you want to get the broccoli warm not cook it). Drain then run under cold water until the pasta is cold.
In a large bowl, gently combine tomatoes, mozzarella, lemon oil, parsley, and lemon juice and zest. Mix well then gently stir in pasta and broccoli. Season to taste with salt and pepper and serve.
