About this recipe: This wholewheat pasta salad is made with cherry tomatoes, blanched broccoli, and parsley. Lemon infused olive oil makes the pasta salad bright and tasty.


Serves: 4 

  • 500g wholewheat fusilli or penne pasta
  • 600g broccoli, cut into florets
  • 350g cherry tomatoes, halved
  • 120g mozzarella bocconcini, halved
  • 100ml lemon infused olive oil
  • 75g chopped fresh parsley
  • zest and juice of 1 lemon
  • salt and pepper, to taste

  1. Bring a saucepan of lightly salted water to the boil. Add the pasta and cook according to the instructions on the packet. Two minutes before the pasta reaches al dente, add the broccoli (you want to get the broccoli warm not cook it). Drain then run under cold water until the pasta is cold.
  2. In a large bowl, gently combine tomatoes, mozzarella, lemon oil, parsley, and lemon juice and zest. Mix well then gently stir in pasta and broccoli. Season to taste with salt and pepper and serve.

Mozzarella bocconcini are small balls of fresh mozzarella also known as mozzarella pearls, mozzarella cherries and baby mozzarella.
