Preheat the oven to 200 C / Gas 6. Line two 12-hole muffin tin with 18 paper cases.
Mix the flour and baking powder together in a large bowl. Ensure that the baking powder is thoroughly mixed in with the flour.
In a measuring jug, combine the eggs, almond milk and vanilla. Pour in enough vegetable oil to bring the total mixture amount up to 300ml.
Combine the wet ingredients with the dry ingredients, add the banana and mix everything together. Spoon the mixture into the prepared paper cases filling no more than 2/3 full to ensure room for a good rise.
Bake in the preheated oven for about 18 minutes, until risen and a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool on a cooling rack before serving.
