Chocolate chip cookies with Nutella® filling

About this recipe: Soft and chewy Nutella® chocolate chip cookies. Loaded with dark chocolate chips and a creamy Nutella® centre. These cookies will melt in your mouth!

Makes: 2 dozen cookies

  • 115g butter, softened
  • 150g caster sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 300g plain flour
  • 1 teaspoon bicarbonate of soda
  • 150g dark chocolate chips
  • 1 tub Nutella®, as needed

  1. Preheat the oven to 170 C / Gas 3.
  2. Beat together the butter and sugar with an electric mixer till creamy.
  3. Add the eggs and the vanilla; mix again until all combined and smooth.
  4. In another bowl use a spoon to mix the flour with the teaspoon of bicarb.
  5. Using a spatula add half of the flour to the creamy mix, incorporate well then add the other half of the flour.
  6. Add the chocolate chips to the mixture.
  7. Mix it all and leave it to chill in the fridge for at least 10 minutes (the cooler the mix the easier to form the cookies).
  8. Take a tablespoon of the cookie dough and place it in the palm of your hand. Press it flat, then place a teaspoon of Nutella® in the centre.
  9. Now fold the edges of the dough over the Nutella® centre to form a parcel. Place on a parchment-lined baking tray.
  10. Bake the cookies in the preheated oven for 12 to 14 minutes.
  11. Once baked, place on a wire rack and let them cool - but they can be eaten warm too!

Very very thick cookie dough. It's very messy to make and taste like cookie dough. Try gas 5 for 15-20 minutes. The kids loved them but I won't make them again. - 22 Jan 2016
