About this recipe: Quick and easy and very tasty. Another very elastic recipe, you can change the quantities of any of the ingredients without any drastic change in taste. Serve with crackers, French bread or melba toast.

Serves: 8 

  • 2 (400g) tins butter beans, drained
  • 1 avocado, peeled and stoned
  • juice of 1 lemon
  • 1 packet roasted and salted cashew nuts
  • chopped fresh coriander, to taste

  1. In a food processor, or using a stick blender, combine the beans, avocado and lemon juice and blend until a smooth paste forms.
  2. Grind the cashews with a mortar and pestle then fold into the pate with the fresh coriander. Spoon into a serving bowl and serve.
