    About this recipe: An easy-peasy tasty potato dish. Great for serving up as an easy supper or as a tasty breakfast or brunch.

    Ingredients
    Serves: 4 

    • 6 medium potatoes
    • 2 leeks
    • 6 tomatoes
    • 8 sausages
    • 4 eggs

    Method

    1. Preheat the oven to 200 C / Gas 6.
    2. Peel and dice the potatoes into roughly 1cm cubes then spread out on an oiled baking tray.
    3. Roast the potatoes in the preheated oven for 10 minutes until starting to soften.
    4. Meanwhile, slice the leeks, quarter the tomatoes and cut the sausages into thirds. Remove the potatoes from the oven and add the leek, tomato and sausages and spread out over the tray.
    5. Roast for a further 20 minutes or until the potato is crisping and golden brown. Remove from the oven and keep warm.
    6. Warm a little oil in a frying pan over a medium heat then add the eggs. Fry until the white is no longer runny and the yolk is as hard or soft as desired.
    7. Spoon the potato hash into a warm bowl and top with a fried egg. Serve immediately.
