Coconut-coriander chutney

    Simple preparation, incredible flavour. Takes only minutes to prepare. Serve this fresh chutney with any curry.

    Serves: 4 

    • 2 cloves garlic
    • 1 (5cm) piece fresh root ginger, peeled
    • 2 to 3 tablespoons desiccated coconut
    • 90g chopped fresh coriander
    • 6 tablespoons fresh lemon juice
    • 1 teaspoon caster sugar, or to taste
    • salt, to taste

    1. Place the garlic and ginger in a food processor or blender and pulse to mince. Add the coconut, coriander, and lemon juice and process to a coarse paste. Season to taste with sugar and salt. Transfer to a serving bowl and serve.
