Easy peasy vegan banana pancakes

    Super quick and easy vegan banana pancakes. I mash the bananas with a fork so the mixture is extra thick for super doughy pancakes, but mash with a potato masher or even in a food processor for a smoother mix. Tastes fab with vegan chocolate spread - I use Plamil® chocolate spread.

    Serves: 2 

    • 1 banana
    • 125g plain flour
    • 100ml soya milk
    • 2 tablespoons oil

    1. Mash the banana up with a fork or in a food processor depending on how thick you want your mix to be.
    2. Mix the flour, soya milk and mashed banana together in a bowl or beaker.
    3. Heat a couple of tablespoons of oil in a frying pan on a medium to high heat. Ladle a little of the mixture into the frying pan. Sometimes I use the whole mix for one super big, super thick, super doughy pancake.
    4. Wait until the pancake sets a little, working a spatula under the edges to prevent sticking to the pan. When it looks like the pancake is starting to brown underneath, flip it. Don't worry if there's still a little runny mixture on the top of the pancake, it will cook quickly once it's flipped. Wait until the pancake is a little brown, slip onto a plate and enjoy!
