Place the flour in a mixing bowl then add the eggs and beat until well combined. Gradually mix in the oat milk until a smooth batter forms. Stir in the melted sunflower spread and season with salt to taste.
Lightly oil a frying pan over a medium heat. One ladle of mixture makes one pancake. Spoon around the pan and allow to cook until the top of the pancake is set. Flip the pancake over with a spatula and allow to brown. Transfer to a warmed plate and keep warm, repeat to make the other pancakes. Serve with toppings of your choice.
Plain flour also works, but the pancakes are more brittle and break. Very light mixture so these pancakes don't toss well.
