    About this recipe: A classic but delicious quick rice dish that is ready in 20 minutes. Serve this egg fried rice as part of a larger meal.

    Ingredients
    Serves: 3 

    • 1 tablespoon vegetable oil
    • 1 large egg, lightly beaten
    • 150g to 280g mircrowave basmati rice
    • 1 tablespoon sesame oil
    • 1/2 red onion, sliced
    • 1/2 red pepper, sliced
    • 1 handful green peas
    • 3 spring onion bulbs, sliced
    • 5 green beans, sliced
    • 1/2 carrot, julienned
    • 3 dessertspoons light soya sauce
    • 2 tablespoons oyster sauce
    • 2 tablespoons rice wine vinegar
    • freshly ground pepper to taste

    Method
    Prep:15min  ›  Cook:10min  ›  Ready in:25min 

    1. Heat one tablespoon of vegetable oil in a frying pan or wok over a high heat. When the oil is very hot, add the beaten egg, and cook for few minutes. Remove egg from wok and set aside.
    2. Microwave the basmati rice according to the instructions on the packet. Set aside.
    3. Heat one tablespoon of sesame oil in the same pan or wok, then add the onion and stir fry for a few seconds, before adding all the vegetables together. Cook until just tender.
    4. Add the rice to the pan or wok, then mix in all other remaining ingredients, along with the cooked egg. Mix together, season to taste and serve hot.
