Quick and simple shortbread

    A quick and easy recipe for an afternoon treat. Only four ingredients! The recipe is easy to double if you like and the can be frozen, not that they last long enough to make it to my freezer!

    Makes: 28 shortbreads

    • 150g plain flour
    • 50g caster sugar
    • 100g softened butter or Stork®
    • a few drops vanilla extract

    1. Preheat oven to 180 C / 160 C fan / Gas 4. Line a baking tray with baking parchment.
    2. Combine the flour, sugar and butter together in a mixing bowl and rub together with your fingers. When the dough starts to form add the vanilla extract.
    3. Roll out onto a lightly floured surface to your desired thickness and use a knife or cutter to cut out shapes. Transfer to the prepared baking tray.
    4. Bake in a preheated oven for 10 to 15 minutes or until golden brown. Remove from the oven and place on a cooling rack. After 5 minutes, sprinkle with sugar. Allow to cool and enjoy.


    You don't need to add vanilla as you can make without. The flavour can be changed with zest from orange or cinnamon, depending on what you prefer. As I rolled it out quite thin this made 28 little short breads.
