Delicious orange cake with orange icing

    A lovely orange cake that can be served with afternoon coffee. Allow plenty of time for the cake to cool fully before decorating with the delicious orange icing.

    Serves: 10 

    • For the cake
    • 125ml milk
    • 125ml orange juice
    • 125ml oil
    • 2 eggs, beaten
    • 1 1/2 teaspoons orange zest
    • 250g plain flour
    • 1/2 teaspoon salt
    • 3 teaspoons baking powder
    • 300g caster sugar
    • For the orange icing
    • 6 tablespoons softened butter
    • 250g icing sugar
    • 2 tablespoons orange juice
    • 1 teaspoon vanilla extract
    • 1 teaspoon orange zest
    • orange slices, to decorate

      For the cake:

    1. Preheat the oven to 180 C / Gas 4. Grease two (20cm) cake tins and line with baking parchment.
    2. In a jug combine the milk, orange juice, oil, eggs and orange zest. Put to one side.
    3. In a large bowl sift the flour, salt and baking powder then mix in the sugar. Make a well in the centre and pour in the milk mixture. Divide the cake mixture between the two prepared cake tins.
    4. Bake in the preheated oven for 35 minutes or until a skewer inserted into the centre comes out clean. Remove from the oven, allow to cool for a few minutes in the tin then transfer to a cooling rack to cool completely.
    5. For the orange icing:

    6. Cream the butter until smooth then gradually add the icing sugar. Beat in the orange juice followed by the vanilla extract and 1 teaspoon orange zest.
    7. Once the cake is cool, lay the first layer on a serving plate then spread with some icing. Place the second cake layer on top and spread with icing; decorate as desired with orange pieces. Slice and serve.
