For the cake:
Preheat the oven to 180 C / Gas 4. Grease two (20cm) cake tins and line with baking parchment.
In a jug combine the milk, orange juice, oil, eggs and orange zest. Put to one side.
In a large bowl sift the flour, salt and baking powder then mix in the sugar. Make a well in the centre and pour in the milk mixture. Divide the cake mixture between the two prepared cake tins.
Bake in the preheated oven for 35 minutes or until a skewer inserted into the centre comes out clean. Remove from the oven, allow to cool for a few minutes in the tin then transfer to a cooling rack to cool completely.
For the orange icing:
Cream the butter until smooth then gradually add the icing sugar. Beat in the orange juice followed by the vanilla extract and 1 teaspoon orange zest.
Once the cake is cool, lay the first layer on a serving plate then spread with some icing. Place the second cake layer on top and spread with icing; decorate as desired with orange pieces. Slice and serve.
This is the best ever orange cake recipe. It is simple to make, as light as a feather and delicious. I consider my self a fair baker and this is the best recipe ever. I did not tweak or alter this recipe in any way. It is amazing. - 20 Jun 2015
